Some Thai was born in 2024 with a simple but provocative idea: what if a Thai restaurant didn't care about being authentic? Chef Jorge Mendez — a seasoned Filipino culinarian with deep respect for Southeast Asian flavors — decided to open a restaurant that would celebrate Thai cuisine not by replicating it, but by reimagining it.
The name itself is the first act of playfulness. "Some Thai" is a bilingual pun — English for "some Thai food," and a nod to the Thai phrase "ไทยบ้าง" (Thai brang), meaning "a bit Thai." The logo carries both scripts, and the brand's personality carries that same dual energy: rooted in Thai culinary tradition, but irreverent enough to make it its own.
Starting with a single location on Tomas Morato Avenue in Quezon City, Some Thai quickly built a following around its Tom Yum, Shrimp Pad Thai, and rotating specials. By 2025, a second location opened at The Podium in Mandaluyong, followed by a third in 2026 at Opus, Bridgetown Destination Estate — each space reflecting the brand's bold design language: deep red walls, warm wood, and that unmistakable energy of a kitchen that's having fun.
